Chocolate covered Raspberry Sorbet

Chocolate Raspberry Pucks

If you're on the hunt for a delightful and refreshing treat that's easy to make with minimal ingredients, look no further! This chocolate-covered raspberry sorbet puck is the perfect combination of tangy and sweet, providing a burst of flavors that will leave your taste buds dancing. With just six simple ingredients, you can create this luscious dessert in no time.

Ingredients:

  1. 2 cups Greek yogurt: Use Greek yogurt as the creamy base for our sorbet. Its richness adds a velvety texture and a hint of tanginess that complements the raspberries perfectly. (I found that full fat works better)

  2. 15 oz frozen raspberries

  3. 1 TBSP vanilla extract

  4. 1/4 cup maple syrup

  5. Milk chocolate mixed with 2 TBSP of coconut oil

Instructions:

  1. Blend the raspberries, greek yogurt, maple syrup, and vanilla extract in a high-powered blender or food processor. You can adjust the sweetness by adding more maple syrup if desired.

  2. Freeze the mixture: Pour the raspberry and yogurt blend onto a baking pan with parchmanct paper into the size of 2-4 inch circles. Freeze for at least 4-6 hours or until it becomes firm.

  3. Create the chocolate coating: While the sorbet is freezing, prepare the chocolate coating. Melt the milk chocolate and coconut oil together using a double boiler or microwave. Stir until you achieve a smooth and glossy chocolate mixture.

  4. Dip and coat: Once the sorbet has frozen to a firm consistency dip each sorbet puck into the melted chocolate, ensuring it's entirely coated. You can place the chocolate-covered sorbet balls on a parchment-lined tray and set in the freezer for a couple of minutes.

  5. Serve and enjoy - Your chocolate-covered raspberry sorbet is now ready to be savored! Serve it on a hot summer day or as a delightful dessert to end a delicious meal.

With just six ingredients, you can create a delightful and visually stunning dessert that will impress your family and friends. The best part? You don't need any fancy equipment or culinary skills to whip up this sensational treat. So, don your apron and embark on a culinary adventure that's as enjoyable to make as it is to eat. Happy sorbet-making!
